White Rabbit Jackalope
Created for GABS 2016, this beer quickly became a house fave… the lack of thought that originally went into it and the convenience of having friends at a distillery have melded into a beer of exquisite texture and delectable complexity – a cracker jack to be sure and one we couldn’t resist trying again and again!
A simple low alcohol blended Wheat Ale partially acidified and fermented in barrels and partially in more conventional stainless vessels then finished with a shot of special whisky blend. The whisky and oak flavours work and absolute treat in this beer balancing beautifully against the acidic tartness and slight sweetness of the malt. The beer has an additional layering of salt (the Gose aspect of the beer). The beer has a lovely warm doughy, slightly nutty aroma and sweet / sour palate that is soft and malty with a hint of oak and a well entwined warmth from the Whisky.
